Gas vs Flat Top Grills – what’s the difference?

Cooking differences

The open flame comes in direct contact with the meat to give it a blackened effect; a process called the Maillard reaction (caramelization of sugar from heat). Excess oil or grease drips from the grids onto the flames below unless the design is configured to collect the grease in a recessed area. The grease will drip down into the pan underneath if you have the grill with cooking grates.
